Bacon Pancakes Sweet Savory Bites

Fluffy pancakes with crispy bacon offer a balanced, sweet and savory breakfast, finished with maple syrup or butter.

Ingredients

2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 tbsp brown sugar
1 cup milk (non-dairy milk also works)
1 tsp vanilla extract
2 small eggs
8 oz bacon strips, diced and cooked
3 tbsp butter for cooking

Steps

Mix milk with vanilla extract, eggs, baking powder, baking soda, salt, and brown sugar in a blender. Pulse until combined. Add flour and blend briefly until smooth. If using a mixing bowl and whisk, sift the flour before combining to avoid lumps. Mix until ingredients are just combined, avoiding overmixing to ensure fluffy pancakes.
Heat a skillet and cook diced bacon until browned and crispy. Remove bacon from the skillet and set aside, leaving bacon grease in the skillet for added flavor.
Using the same skillet, place it over medium-low heat and add 1 tbsp butter if necessary. Drop pancake batter into the skillet and sprinkle cooked bacon over the runny batter. Cook for 1-2 minutes, until edges begin to settle. Flip when bubbles form on the surface, indicating the bottom is cooked. Repeat with remaining batter.
Serve warm with maple syrup, butter, or extra bacon as toppings. For large batches, keep pancakes warm in a low-temperature oven until ready to serve.

Tips
Retain a thin layer of bacon grease in the skillet for a rich, smoky flavor. If the skillet feels too greasy, drain excess. Add butter if the skillet dries out during cooking.
