The ultimate side dish, Broccoli Cheese Casserole is creamy, cheesy and comforting. The perfect addition to any dinner.
Ingredients
1 1/2 pounds broccoli florets, cut into bite sized pieces
8 ounces cream cheese, room temperature and diced
1/4 cup sour cream
1/4 cup milk
4 tablespoons melted butter, divided
1 1/2 cups shredded cheddar cheese, divided
1/2 cup grated parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon ground cayenne
1/4 teaspoon kosher salt
1/4 teaspoon ground pepper
1 1/2 cups cheddar crackers, crushed
Instructions
Preheat oven to 350˚F.
Coat a 3 quart baking dish with cooking spray and set aside.
In a large skillet, bring 1 inch of salted water to a rolling boil.
Add the broccoli, cover and steam over high heat until crisp-tender, approximately 2-3 minutes.
Drain the broccoli and transfer to a large bowl.
In a medium bowl, combine the cream cheese, sour cream, milk, 2 tablespoons melted butter, 1 cup cheddar cheese, parmesan, garlic powder, onion powder, cayenne, salt and pepper until well combined.
Pour the cream cheese mixture over the broccoli and stir to combine.
Transfer the broccoli mixture to the baking dish and sprinkle with the crushed crackers.
Pour the remaining two tablespoons of butter over the casserole and top with the remaining cheddar cheese.
Bake the casserole in the oven for 20-25 minutes until bubbly and golden brown.
Remove from the oven and rest for 5-10 minutes.
Serve immediately.
