Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1 cup semisweet or dark chocolate chips
- 1 tsp coconut oil or vegetable oil (optional)
- Sprinkles or crushed nuts (optional, for decoration)
Directions:
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, beat the butter and powdered sugar together until light and fluffy. Mix in the vanilla extract.
- Gradually add the flour and salt to the butter mixture, stirring until the dough comes together.
- Roll the dough into a ball and refrigerate for 10 minutes to make it easier to handle.
- Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Use a cookie cutter to cut into desired shapes.
- Place the cookies on the prepared baking sheets, leaving about 1 inch of space between each cookie.
- Bake for 12–15 minutes or until the edges are just golden. Let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
- Melt the chocolate chips with the coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Dip half of each cookie into the melted chocolate and place on parchment paper to set. Add sprinkles or crushed nuts for decoration if desired.
- Let the chocolate harden completely before serving or storing.
