Baked Apple Fritters

Ingredients

– 2 cups all-purpose flour
– 1/4 cup granulated sugar
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 2 large eggs
– 3/4 cup milk
– 1 teaspoon vanilla extract
– 4 tablespoons unsalted butter, melted
– 2 cups diced apples (such as Granny Smith or Honeycrisp)
– 1 cup powdered sugar
– 2-3 tablespoons milk (for glaze)
– 1/2 teaspoon vanilla extract (for glaze)

Instructions

1. **Preheat the Oven:**
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. **Prepare the Dry Ingredients:**
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
3. **Mix the Wet Ingredients:**
In a separate bowl, beat the eggs. Add the milk, vanilla extract, and melted butter, and whisk until combined.
4. **Combine Wet and Dry Ingredients:**
Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Be careful not to overmix.
5. **Fold in Apples:**
Gently fold the diced apples into the batter until they are evenly distributed.
6. **Shape the Fritters:**
Using a spoon or ice cream scoop, drop mounds of batter onto the prepared baking sheet, leaving space between each fritter.
7. **Bake:**
Bake in the preheated oven for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
8. **Prepare the Glaze:**
While the fritters are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
9. **Glaze the Fritters:**
Once the fritters are done baking, remove them from the oven and let them cool for a few minutes. Drizzle the glaze over the warm fritters.
10. **Serve:**
Serve the fritters warm and enjoy!
