Ingredients
1 pound lean ground beef
1 packet taco seasoning mix 1 ounce
1 cup salsa
1 15 oz can black beans, drained and rinsed
1 cup frozen corn kernels
2 cups crushed tortilla chips divided
2 cups shredded cheddar cheese divided
1/2 cup sliced black olives
1/4 cup chopped green onions
1/4 cup fresh cilantro chopped (optional)
Instructions
Preheat oven to 350°F.
In a skillet over medium heat, cook ground beef until browned, 5-7 minutes. Drain excess fat.
Stir in taco seasoning and salsa. Simmer 2-3 minutes until thickened.
In a bowl, mix together cooked beef, black beans, and corn.
Spread 1 cup crushed tortilla chips in a greased 9×13 baking dish. Top with beef mixture.
Sprinkle 1 cup cheddar cheese over top.
Add remaining 1 cup tortilla chips, pressing lightly into cheese.
Top with remaining 1 cup cheddar cheese.
Bake 20-25 minutes until hot and bubbly.
Remove from oven and top with olives, green onions and cilantro (if using).
Let sit 5 minutes before serving
