Ingredients
½ pound lean ground beef
½ cup diced yellow onion
½ teaspoon salt
¼ teaspoon black pepper
¼ cup water
2 tablespoons taco seasoning
8 ounces Colby jack cheese, shredded
12 ounces tortilla chips (Tostitos brand, use approximately ⅔ of the bag)

Chopped fresh cilantro
Instructions
Preheat oven to 450°F. Spray a 12-cup capacity Bundt pan with cooking spray. Set aside.
In a large skillet over medium-high heat, add the lean ground beef, diced yellow onion, salt, and black pepper. Cook for 6-7 minutes, or until no pink remains. Drain excess fat from the skillet.
Return the skillet to medium heat and stir in water and taco seasoning. Mix until the ground beef is evenly coated. Cook for another 2-3 minutes, or until most liquid has evaporated. Remove from heat.
Add a layer of half the shredded cheese to the bottom of the prepared Bundt pan, followed by half the ground beef mixture, and then ⅓ of the bag of tortilla chips. Do not pack the chips down.
Add the remaining shredded cheese, ground beef mixture, and another ⅓ of the tortilla chips. Ensure an even layer without overfilling the Bundt pan.
Bake for 10 minutes in the preheated oven.
Remove the Bundt pan from the oven. Place a heat-proof plate inverted over the top of the Bundt pan and carefully flip it to release the nachos onto the plate. If any cheese sticks to the Bundt pan, place it back on top of the nachos.
Serve as-is or top with sour cream, diced tomatoes, and chopped fresh cilantro before serving.
