Cheeseburger Quesadilla Melt

Cheesy quesadillas packed with juicy beef and a zesty burger sauce, perfect for a quick mealtime upgrade.

Ingredients

Beef Mixture
450 g lean ground beef
1 teaspoon fine sea salt
0.5 teaspoon freshly ground black pepper
0.5 teaspoon garlic powder
0.5 teaspoon Worcestershire sauce
Tangy Burger Sauce
120 ml mayonnaise
2 tablespoons grated onion
2 tablespoons ketchup
1 tablespoon sweet pickle relish
2 teaspoons yellow mustard
1 teaspoon white vinegar
0.25 teaspoon paprika
Quesadilla Assembly
4 large flour tortillas
16 thin slices cheddar cheese
120 ml chopped dill pickles
120 ml finely minced onion
1 tablespoon olive oil

Instructions

Combine mayonnaise, grated onion, ketchup, relish, mustard, vinegar, and paprika in a bowl. Mix thoroughly until homogenous, then cover and refrigerate for optimal flavor development.
Heat a large skillet over medium-high heat. Add ground beef and break apart with a spatula, cooking for 5–7 minutes until thoroughly browned. Drain excess fat from the skillet.
Return skillet to heat and incorporate salt, black pepper, garlic powder, and Worcestershire sauce. Stir to thoroughly coat all beef, then remove from heat.
Arrange tortillas flat on your work surface. Place two slices of cheddar on half of each tortilla. Evenly distribute seasoned beef over cheese, then top with minced onions and chopped pickles. Layer with two additional slices of cheddar per tortilla. Fold each tortilla into a half-moon.
Wipe out the skillet or use a clean pan. Heat over medium-high and add olive oil. Once shimmering, add a filled tortilla and cook for 2–3 minutes per side until golden brown and crisp. Work in batches as needed.
Transfer toasted quesadillas to a cutting board. Allow to rest for 1 minute, then slice into portions. Serve immediately with chilled burger sauce for dipping.

Notes
Allowing the burger sauce to rest in the refrigerator enhances its flavor.
Use a sharp knife or pizza cutter for clean quesadilla portions.
