Reese’s Peanut Butter Chocolate Chip Cookie Bites

Total Time: 27 minutes
Yield: 24 bites

Ingredients

½ cup unsalted butter, softened
½ cup creamy peanut butter
½ cup granulated sugar
½ cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1¼ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
¾ cup mini chocolate chips
24 mini Reese’s peanut butter cups, unwrapped

Directions:

Make the Dough:
Preheat oven to 350°F (175°C). In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until smooth. Beat in egg and vanilla. In another bowl, whisk flour, baking soda, and salt. Gradually add dry ingredients to wet, then fold in chocolate chips.
Shape and Bake:
Grease a mini muffin pan. Roll dough into 1-inch balls and place each into a muffin cup. Bake for 10–12 minutes until lightly golden.
Add the Reese’s:
Immediately press a mini Reese’s cup into the center of each cookie while still warm. Let cool in the pan for 10 minutes, then transfer to a wire rack.
Serve:
Serve warm or cooled. These chewy, chocolatey bites with a peanut butter center are perfect for parties or gifting!
